Quick Apple Pastry

Updated: Aug 18, 2020

I had some pre-made frozen puff pastry I decided to break out. Keeping some puff pastry on hand can help you quickly whip something up and you can fill them with anything...nutella, pastry cream or apples! We'll be making Washington Apple filled puff pastry.

*what you'll need

3 medium apples

2 tbsp. ap flour (flour surface)

1 pkg. puff pastry

1/4 c. apricot jelly

1 egg

Preheat your oven to 350 degrees Fahrenheit.

1. Follow the instructions on your puff pastry packaging to thaw. I left mine out for 3 hours.

2. Sprinkle flour on your surface.

3. Roll out your puff pastry to 1/4".

4. Cut off the edges.

5. Cut the dough into rectangles of 3" x 5". You can adjust the measurements depending on how much puff pastry and apples you have.

6. After you've cut your pastry dough, cut the hips of the apples off. Then cut them into very thin slices. Set aside.

7. Microwave the apricot jelly, 30 seconds in the microwave. The consistency should covert from chunky jelly to liquid. Stir once until the liquid is smooth.

8. On a baking tray, line it with parchment paper and place your puff pastry on it. Let the assembly begin.

9. Brush a thin layer of the apricot jelly on the puff pastry.

9. Assemble the apple slices on top.

10. Whisk one egg. Brush the egg on the sides off the puff pastry for a golden, brown crust.

11. Place the tray on the middle shelf of your oven at 350 deg. F.

12. After 30 mins. or until the edges are golden brown, pull the tray out. The apple slices will become smaller as well.

13. While the pastry is still warm, use the remaining apricot jam to glaze the top of it. If the apricot has hardened, you can microwave it for 30 seconds again.

Enjoy them while they're hot!

If you want to save them for later, wrap them in foil wrappers and store in freezer. Warm them up in the toaster oven as you want them!
