Cold yogurt with fresh vegetables is a great sidekick to a lot of warm Indian dishes also referred to as raita. Raita provides itself as a great base that allows you to make substitutions as you see fit. I've blitz one avocado into the yogurt before or even substitute the jalapeños with a green chili if you want something more spicy. The options are unlimited.
What You'll Need
1/4 c. diced medium red onion
1/4 c. diced pickled jalapeño
1 c. non-fat yogurt
1 c. diced cucumbers
1 c. diced cherry tomatoes
1/4 tsp. tumeric
1/4 tsp. cumin
1/4 c. black pepper
1 tsp. kosher salt (or to taste)
1 tbsp. of cilantro or enough to top
Measure your yogurt and place in a medium bowl. Mix with a spoon until smooth.
Add the diced jalapeño, tomato, red onion and cucumber to the yogurt.
Add in the turmeric, cumin, black pepper and salt.
Mix.
Cover and let it sit in the fridge for at least one hour.
Sprinkle the diced cilantro on top before serving.
