You've probably seen customized shallot oil everywhere and they're so versatile. Whether it's on an egg or in a yogurt sauce, it's a complimentary sauce for a warm dish.
What You'll Need
3 shallots
1 tbsp. kosher salt
1/4 c. red chili flakes
3 star anise
1 c. neutral oil
1 c. yogurt
pinch of salt
pinch of black pepper
1/4 c. chopped cilantro
Shallot-Chili Oil
Peel and cut the shallot into circles. Place in bowl and set aside.
In a medium bowl, measure the salt, star anise and chili flakes. Set aside.
In a cast iron pan, heat up the neutral oil of choice.
Add the shallots. Stir occasionally until desired golden brown color.
Remove the shallots to the red chili flake bowl.
Carefully add the oil to the spice blend. Please be careful.
Mix. Let the oil infuse for at least 24 hours and place in a container for later use.
Shallot-Chili Oil Yogurt
In a bowl, add the yogurt and mix until smooth.
Add the infused oil with the salt and black pepper.
Finely minch cilantro and add to bowl.
Mix well.
