Signs of bread made perfectly: nice crunch on the outside yet chewy on the inside. Got the opportunity to walk behind the scenes at the bakery to see how they made their delicious bread was made!

     During my tour of Little Italy in the Bronx, Terranova Bakery was one of the stops. You walk into the store and you're greeted like one of the family members. I was in awe of the variety of breads you can choose from-- rolls to donut-shaped bread! They gave us a basket of sliced bread that just came out of the oven. I could feel the lingering heat as I took my first bite. As it is said in the Pixar movie Ratatouille, "How do you tell how good bread is without tasting it? Not the smell, not the look, but the sound of the crust. Listen. Symphony of crackle. Only great bread sound this way."

     As we were munching on our slice of bread, we were taken to the back where they baked the bread. There were big bags of flour on the side and wooden paddles that were a few feet long. Inside the heat was running and you can feel the tremendous amount of residual heat coming from the entrance. These ovens were custom made a few hundred years ago and the structure remains strong. However here and there a few brick pieces would fall from the top and they would have to get a very small man to go through the very minute hole to go in with the guidance of an engineer to repair the brick oven. Although it's a few hundred years old, the quality of the bread is still astonishing.
